In Ubuntu, you can turn automatic updates on or off by issuing the following command:

sudo apt-get install unattended-upgrades
sudo dpkg-reconfigure -plow unattended-upgrades

By default updates are done daily, but that can be modified by editing /etc/apt/apt.conf.d/20auto-upgrades.
